This is a collection of recipes and ideas for your office lunch break; a curation of my favourites, tried and tested, with some of my own creations thrown in for good measure. What I promise is that they will all be simple and quick to whip up, won’t cost the earth and will fill you with goodness.
I’m somebody who used to buy lunch out every day, but since clocking onto the fact that making my own might save me some cash (around £100 a month, to be precise!), I have become a convert and am now rarely without my trusty Tupperware.
Aside from saving money, you also have the advantage of knowing exactly where the ingredients you’re using have come from and you can cut out the unnecessary added chemicals and sugar that always tend to make their way into shop-bought products.
Most of the recipes that I’ll be posting are vegetarian or vegan, and that’s because they tend to be cheaper, are often healthier, and I’ve become more and more aware of the global sustainability and animal welfare issues that come with regularly eating cheap meat. I’ve been pleasantly surprised by how much delicious food you can make with no need for meat or dairy.
